While Nikki might not have the international acclaim of a Britney or Justin, in her days since Disney she's managed to carve out an enviable career. She is one of the most popular stars on one of the most popular channels on television; Hallmark. Her movies are consistent ratings winners. Fans, literally, line up at conventions just to get a photo with her. And these days she's not only starring in Hallmark movies, she's also developing and producing them. As she shared with me in a recent interview:

"I was told by the industry over and over again, 'you gotta pick a lane, you gotta pick a lane, you can't do all of those things.' Well, women like Reese Witherspoon, these women changed the game for us. And said 'hey it's okay for you to be all the things you want to be, if you want that.' So, I would say to other women out there... don't be afraid of your ambition."

Curious Caterer: Dying For Chocolate - Sunday April 10th on Hallmark Movies & Mysteries

In her newest project, Nikki is wearing multiple hats as a chef, caterer, and ameteur detective. The movie is called Curious Caterer: Dying For Chocolate and it's based on the popular books by author Diane Mott Davidson. The new film reunites Nikki with her friend and frequent co-star Andrew Walker.

"I called him and I said I just got a script and I heard that they're also going out to you. And he's like 'well it's a yes for me if it's a yes for you.' And so I said yeah, let's go get after it."

"Our [Hallmark] fans are the greatest and they're the nicest and the kindest and have so much heart. And I just feel really blessed to be a part of all of it."

And as for a possible MMC reunion with Britney some day?

"That would be pretty incredible, I would have to say. It would be wonderful just to see her and give her a big hug after all these years. Her and Christina [Aguilera] both by the way. Would just be so lovely."
